We have had excellent luck with the site vrbo.com (Villa Rental by Owner). There is always a little twinge no matter where or what  we have rented - from houses to apartments -from Hawaii to Florida - it  might not be there when we arrive. In this case our apartment at 169 Rue du Temple was there.&lt;br /&gt;&lt;br /&gt;When we arrived we called the Manager, Joanna, and told her we would be there shortly. She had to meet us to show us around and give us the keys. We each got a set of keys along with a key to the post office box which we didn't need. The owner's name is Marshall. My husband had very good dealings with him over the few months before we arrived.&lt;br /&gt;&lt;br /&gt;Like many apartments in Paris this one opened from a front door abutting the street. A long hall with a light that went on automatically but stayed on for a very short time - led us to an open area. I suppose if there were plants, trees or anything pretty I would call it a courtyard. The apartments in this building surrounded the "courtyard" area. On this floor were the trash and recycle room and a room to keep bicycles. It was kept clean. Many nights we would walk in to the trash overflowing but the next day it was all cleaned up.&lt;br /&gt;&lt;br /&gt;Also like many apartments there is no elevator. We were on the second floor. There were renovations going on to the apartment across the hall but other than wet paint this didn't bother us at all. Luckily (and we knew this ahead of time) this apartment did not face the street so it was very quiet. The windows opened with no screens on them but we never found anything flying around the apartment.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Pros:&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;The apartment could sort of be called charming in a French sort of way. I liked the way the door opened in the front. &lt;br /&gt;&lt;br /&gt;The apartment was clean but quite small. There were two twin beds which we were able to push together to make one bed. There was something in the closet that allowed us to do that. The closet was quite large and accommodated all our clothes. I found an iron and ironing board in the closet as well. A very small night table sat on one side of the bed.&lt;br /&gt;&lt;br /&gt;There was a refrigerator with a separate freezer, microwave and toaster oven. There were a tea pot, pots and pans, a sink, a three burner stove (no oven), dishes, and eating utensils. The supplies that might be needed (paper towels, for example, were only there if the people before us had left them).&lt;br /&gt;&lt;br /&gt;There was a table with two chairs.&lt;br /&gt;&lt;br /&gt;A large flat screen TV was on the wall.&lt;br /&gt;&lt;br /&gt;Best of all we had Internet access via the computer in Marshall's apartment and a landline that could be used to call anywhere (The United States!) except no calls could be made to a cell phone.&lt;br /&gt;&lt;br /&gt;We liked the location. Right across the street was a large playground with sections - sand, swings, duck pond, and ping pong tables. No dogs were allowed but the kids were having fun. &lt;br /&gt;&lt;br /&gt;This apartment is in the arrondissement three (arrondissement is a section). This is a residential area with lots of open markets for fresh fruits and vegetables, cheese and bread. Although there are patisseries on every corner having then in the open like this was different. We easily walked to this area. Going the other way we were a short walk to the Metro station and another area of restaurants, a large supermarket, and shopping. It was about 1 mile from Notre Dame so we often walked there.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Cons:&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;For the first few days of our stay the lock was broken so anyone could walk into the "courtyard." It did get fixed and then we used a code.&lt;br /&gt;&lt;br /&gt;All the maintenance problems were not fixed. For example there was a washing machine (no dryer) whose handle was broken. A very nice man came over the day we arrived to fix it and other miscellaneous items such as the broken handle on the bathroom door and lightbulbs that didn't work. He couldn't fix the handle though. We still could have used the machine but never did.&lt;br /&gt;&lt;br /&gt;The apartment was damp and hot. We had no heat on but when we came in at the end of the day the first thing we did was open all the two windows. The walls felt damp but I didn't see or smell any mold.&lt;br /&gt;&lt;br /&gt;For a week's stay the bathroom was small. It would have been nice to have a drawer or medicine cabinet. In addition the shower which seemed new had half of a glass screen meaning water had to end up in the bathroom from the other half of the open shower no matter how hard we tried not to let the water out.&lt;br /&gt;&lt;br /&gt;We were each given one shower, one hand and one wash towel for the entire week.&lt;br /&gt;&lt;br /&gt;There was a double sized chair from which the TV could be seen but that and the uncomfortable kitchens chairs were the only place we could watch CNN in English.&lt;br /&gt;&lt;br /&gt;The toilet ran but Joanna showed us what to do to stop it.&lt;br /&gt;&lt;br /&gt;The lighting was terrible. They really need some overhead lights.&lt;br /&gt;&lt;br /&gt;The walls are thin so although we couldn't hear the street we heard everyone leave in the morning and one night my husband was woken up at 3:00a.m. by noise.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;In summary:&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;My cons probably make 169 Rue de Temple sound horrible but it wasn't and we would stay here again especially for the $50E it cost us (One Euro is about $1.27.) it was a great deal. No one came into clean. What would the options would I have if this were to happened to me. I am  a homeowner so at least I could consider selling up.&lt;/p&gt;&lt;p&gt; &lt;/p&gt;&lt;p&gt;One of the options that looks  promising would be to &lt;a href="http://www.rentbackdirect.co.uk/sell-and-rent-back"&gt; sell and rent back my home&lt;/a&gt;. Reading the websites visited I realised that the companies will not charge me any fees and would take care of most of the boring paperwork for me. That is great as paperwork is probably what got me into this mess in the first place.&lt;/p&gt;&lt;p&gt;I could get on with my life and not worry about financial stresses anymore with a scheme like this.&lt;/p&gt;&lt;p&gt; Reposession can be a frightening prospect not to mention the stress it would bring and the shame to our family. Most are probably more familiar with the instant kind that only takes about five minutes to cook up. Nowadays, there are a number or brands of these instant types of couscous that can come in a variety of flavors. One of the leading companies for instant couscous is Near East and is the brand I became familiar with years ago. Near East not only has the original plain flavor, but now also have Roasted Garlic &amp;amp; Olive Oil, Herbed Chicken, Toasted Pine Nut, Mediterranean Curry, Parmesan, Tomato Lentil, Broccoli &amp;amp; Cheese, and Wild Mushroom &amp;amp; Herb. What a fantastic choice! &lt;br /&gt;&lt;br /&gt;I don't exactly know just when I thought of eating couscous but I did so many, many years ago, when I first began cooking in earnest about thirty years ago. Since I was always interested in trying anything new, I remember having come across a wonderful recipe for lamb that is braised in a delicious tomato and beef stock, and then just before serving to add sour cream. The recipe recommended serving this lamb dish on a "bed" of couscous, which frankly at the time I never even had heard of before. So I began looking up just what couscous was, and how it was prepared.&lt;br /&gt;&lt;br /&gt;People now have the convenience of those instant brands of couscous that cook no longer than five minutes, however the more traditional way, is a lot more time consuming. First of all, couscous isn't just a Moroccan dish, but is served in most North African countries, such as Algeria, Tunisia and Libya, as well as Egypt, however it's popularity has now spread nearly worldwide.&lt;br /&gt;&lt;br /&gt;Just how far back couscous was eaten is anyone's guess, but it is first mentioned in a 13th century Hispano-Muslim cookbook, which name translates into English as "The Book of Cooking", one suspects though that the origins and consumption of this granular type pasta goes back even further.(1) Couscous itself is a granular pasta made of semolina wheat and has the look of course raw sugar.&lt;br /&gt;&lt;br /&gt;The traditional way of cooking couscous is a lot more involved than the easy instant five minute kind. First what one has to do is moisten the couscous. Ideally one takes about a cup of couscous, places it in a bowl then add two or three cups of water to the bowl of couscous, then simply using your fingers, stir the couscous around for a few minutes, then in a fine mesh sieve, pour the couscous and water into the sieve to drain the excess water. One then has to place the couscous on something like a cookie sheet and spread the couscous evenly on the sheet and make sure of removing any lumpy qualities and quite literally separate each grain of couscous. In order for all the water to absorb and soak into the couscous, one has to allow at least ten minutes to make each grain of couscous swell up. &lt;br /&gt;&lt;br /&gt;Unlike the instant kinds of couscous, the traditional way of cooking one never adds water to the cooking process itself for couscous, but is instead steamed. Prior to the newer couscous cookers which are now made out of stainless steel and are known as the couscoussi&amp;#233;re, older cookers were made out of glazed earthenware then later copper. The entire couscous cooker comes in two parts...the top part is the section where one places the couscous to steam, while underneath, one would cook either a broth or stew, usually a lamb type stew, that would be served with the couscous. The idea of steaming the couscous this way allowed for the flavors of the broth or stew to saturate into the couscous itself, adding flavor to it, since couscous is rather plain tasting.&lt;br /&gt;&lt;br /&gt;After the couscous has swollen up, one can then put the couscous into the top part of the couscous cooker and steam for about twenty minutes. Believe it or not, one has to remove the steamer part and place the couscous in a large shallow pan, and separate the grains once more to get rid of any lumpiness then add about a cup of water, again stirring the couscous grains to separate, then dump on that cookie sheet again and spread it evenly and allow to dry for another ten minutes. Finally replace the couscous into the steamer part of the couscous cooker and allow to steam again for another twenty to thirty minutes.&lt;br /&gt;&lt;br /&gt;My goodness! Aren't you glad we don't have to go through all this to cook couscous anymore if we don't want to? I did however, give the instructions of how to cook couscous the traditional should you ever feel you would like to cook it in this manner. I do provide links to websites that do show step by step instructions on how to prepare couscous the traditional way for those of you who wish to do so.&lt;br /&gt;&lt;br /&gt;As mentioned, when couscous was prepared the traditional way in the couscous cooker, it was often steamed with a stew in the bottom part of the cooker, and since most Middle Eastern or North African countries eat more lamb, the stew was usually some type of lamb dish. The beauty of couscous however, is that almost any meal can be prepared to go very well and be served with couscous.&lt;br /&gt;&lt;br /&gt;For those who want the quicker way of preparing couscous, that is by using the five minute instant types, such as Near East, I recommend only using the Original Plain variety when making any kind of stews. Back when I first decided to have couscous for that braised lamb dish some thirty or so years ago, Near East's Original Flavor was the only one available, which was just as well. Any flavored kind of couscous one can get, would take away from the taste of a hearty and seasoned stew, whether lamb, or beef. Besides a regular type of beef stew I serve with couscous, I have found it works wonderfully well with the French dish that I often make, Boeuf Bourguignon which is a very hearty beef-type stew made with dry red wine instead of beef stock. The absolutely delicious flavor of Boeuf Bourguignon would be totally lost if one were to use any one of the flavored brands of couscous.&lt;br /&gt;&lt;br /&gt;The flavored types of couscous will add a special touch however to any other meal, even a holiday meal. Instead of using rice, noodles, potatoes or any regular type of pastas, have couscous instead. Having a fried chicken dinner? Why not use the Near Eastern Herbed Chicken or Mediterranean Curry couscous. Serve Parmesan or Roasted Garlic &amp;amp; Olive Oil flavored couscous with Chicken Parmesan. For that Thanksgiving dinner, instead of having the usual stuffing as a side dish for that turkey meal, why not try the Broccoli &amp;amp; Cheese or Wild Mushroom &amp;amp; Herb flavored couscous. These flavored brands of Near East couscous can not only be a fresh new way to make any poultry dinner special, but can also be used as a delightful side dish, for any pork, beef or even fish dinners. For instance, I just love the taste of the Toasted Pine Nut couscous with my special Salmon Steak with Julienne Strips of Leek and Carrots with a White Wine sauce.&lt;br /&gt;&lt;br /&gt;Since thankfully, no one has to prepare couscous the traditional way unless one wants to, most instant brands of couscous only takes five minutes to prepare, all one has to do is follow the instructions given on the box, but basically one boils one cup of water in a saucepan, add about a tablespoon of of butter, then add the couscous...turn the flame off and cover saucepan and let sit for five minute, then "fluff" up by stirring it up with a fork. &lt;br /&gt;&lt;br /&gt;As you can see using couscous, whether the plain or flavored types can truly make any meal just a little more special and a great change from the usual rice, noodles, potatoes or even pasta. For most everyone, money will be tight this season and each of us will probably be cutting back on our holiday spending.  To avoid ending overspending this year, prepare your budget and think creatively. Take a moment, grab a cup of coffee and a notebook and get yourself organized BEFORE you hit the stores. The first thing that goes into your notebook is the amount you have to spend this season. It goes on page 1. Think about how much you can actually afford and then be prepared to assign a per person budget for each of your gift recipients.  On the following page make a list of those people. Who do you need to buy for this year? Write down everyone. Yes, all those teacher and Scout leader gifts add up; so put down all your recipients.&lt;br /&gt;&lt;br /&gt;Next, take a look at that list.  Jot down any gift ideas you already have and be ready to add to those as new thoughts come to you. In terms of the gift recipients, are there some things you can do to narrow it down? If you have a numerous extended family members on your list, you may be able to approach your family members with the idea of drawing names. This allows everyone to get one nice gift. Our family draws names each Thanksgiving and we all agree on a set dollar amount to be spent. We always keep it a secret until the gifts are exchanged.  &lt;br /&gt;&lt;br /&gt;If your group is older, let each member draw a name and then before Christmas donate an agreed upon amount money to a charity.  Each person should think about their person and choose a charity that represents someone special about them. For example, if the person you picked loves to cook, you may choose to donate to a soup kitchen. If the person's favorite celebrity is Oprah or Brad Pitt, you may choose to donate to their non-profit foundation.  The point is to put thought behind your choice. The fun here is that when you all gather at Christmas you make a game of it. You can hand out a list of each charity that received a contribution and then let everyone guess which charity received a donation in their name!  After the guessing is done, let everyone give their recipient the donation card from the charity and tell all the guests why they chose the specific charity for that person.&lt;br /&gt;&lt;br /&gt;For your immediate family think about gifts that they could use, would be fun, special or creative. A gift to our son one year hit all those criteria. He was planning his Acapulco spring break. Rather than pile shirts, sweaters or video games under the tree for him, we gave him a gift we knew he could use.. a Visa gift card to help defray some of the costs of his trip. I designed and made a t-shirt with a Mexican theme, picked up some great free travel books at the local Auto Club, wrote a poem and wrapped everything separately. I then numbered them so he opened the gift card last.  He was thrilled with the money, yet this theme gift was fun to open on Christmas morning.&lt;br /&gt;&lt;br /&gt;Now you have your list, you've come up with some gift ideas and you have a budget. Next, gather all your store coupons and put them in the notebook.  Put the notebook in your purse, briefcase or car each day. Now you are prepared to shop wherever you are each day. Just like that famous American Express motto.. "Don't leave home without it!"  Having your list and ideas on hand  will help you avoid impulse purchases, keep you organized and help you to save time and MONEY.  I have done this for years and am always able to stay within my budget. It takes some effort but you can prevail. Don't let the economic news dampen your holiday spirit and always remember gift giving is about the thought behind the gift.
